The Saturn version may have better graphics, but the Playstation version has better content -- remember that the Saturn version is pretty much a straight arcade port, while the PS1 version adds scores of costumes (100+ total, versus like 15-20), another character (Ayane, my favorite character in the game), and more. It may lose on visuals, but it wins on content.
Another game in that same category is DarkStalkers 3; the PS1 version has missing animation, longer load times (though they aren't too long, about the same as Night Warriors on Saturn really, they are longer than the Saturn version certainly), and more, but it has an RPG-esque character-stats-raising mode, lots of options, multiple sets of game rules (so you can play in Vampire Savior 2 rules mode or Vampire Hunter 2 rules mode, in addition to the default), more characters, and more.

Well, from what I've heard, the CD-i does have one of the better libraries of FMV games out there, and the video quality is great too... if you like that kind of thing it could be okay. It's hopeless for action games, but it was made for video, and that it is good at.
