PS. A few weeks ago I made a more complete list(still was missing some great games I'm sure), but that post took forever to make, so I suggest looking up some past NES threads(I think it was the thread where the NES put the SMS in its place if I remember correctly).

Ufouria / Hebereke is a great game, rarely mentioned. Never released in the US though and pricey. (It's on the Wii VC here.)
Other good games: Little Samson, Kid Icarus, Marios, Tetris, Kirby. And of course HOLY DIVER...
Kickle Cubicle is a great little puzzle platformer from Irem
Metal Storm is a great game from Irem
Life Force is an excellent 1-2 player shmup from Konami, part of the Gradius series
Kid Dracula, recently within the last 6 months procured a copy
Kick Master, kick ass game where you kick enemies

Two of the most replayable games on the system, they just don't get old with friends.
I never did figure out the controls on techmo superbowl , I need to play it some more
Felix the Cat
Contra
Super C
Jackal
Not all of these are "must haves" for everybody, but all of them have been recommended for gameplay related reasons:
NES Notable Game List
My must haves would be this list:
Archon
Batman
Castlevania II Simon's Quest
Castlevania III Dracula's Curse
Dragon Warrior
Double Dragon II
Godzilla
LifeForce
Metal Storm
Ninja Gaiden
Ninja Gaiden II
Pro Wrestling
Section Z
Super Mario Bros 2
Teenage Mutant Ninja Turtles
TMNT the Arcade Game
TMNT III
Willow
Wizards & Warriors
I must spread more rep around, but I whole-heartedly agree. The buddies I grew up with live in Detroit, Chicago and LA, and I live in Cincinnati now, so we rarely see each other. But over holidays when we get together, somehow we always end up playing TSB for hours just like when we were kids. It's a tie that binds us.
Final Fantasy
Dragon Warrior
Dragon Warrior II
Dragon Warrior III
Dragon Warrior IV
The Legend of Zelda
Zelda II: The Adventure of Link
Crystalis
Castlevania
Castlevania II: Simon's Quest
Castlevania III: Dracula's Curse
Metroid
Contra
Super C. (Contra II)

Super Mario Bros. 3
The Adventures of Bayou Billy

Bubble Bobble Part 2
Blaster Master
Chip 'n Dale Rescue Rangers 2
River City Ransom
Teenage Mutant Ninja Turtles 2 or 3 (no point in both)

The lack of Zelda, Metroid and Kid Icarus is intentional.

Arkanoid (must have the Vaus controller for ultimate experience)
Rolling Thunder
Super Mario Brothers 2 (best of the SMB series)
Kickle Kubicle
The Legend of Zelda
Rad Racer
Tecmo Superbowl (blows the Madden series away on any system)
Tecmo NBA Basketball
Karnov
Legend of Kage
Castlevania (difficult though)
Zanac (awesome space shooter)
Rygar
A few great ones I didn't see mentioned yet:
Moon Crystal
A 1992 Famicom game that was unfortunately cancelled for domestic release. It's an action-platformer that pushes animation quality on the system. And it used Prince of Persia style edge climbing long before it was common in Japanese games.
Ultimate Stuntman
A mix of various genres (driving/shooting, platform/shooting, climbing) with some sweet Commodore 64-ish Brit tunes.
Defender II
One of the best versions of Defender around. It might more simplistic than most NES shooters but it manages to hold up very well.
I also think the NES version of Trojan is underrated. It's not obscure but I can rarely find fans.
May favourites were always Double Dragon 2, Track & Field 2, Bionic Commando, Dr. Mario and Ice Climber.
Most of what I like has already been mentioned, so I'd say Maniac Mansion - better music than the DOS version.
I recommend these games because they are fun with great replay value:
Archon
Base Wars
Hogan's Alley (lightgun)
Wild Gunman (lightgun)
You might as well get a combo cart of Super Mario / Duck Hunt since they are cheap. Both games are okay but short-lived.
Games like Tecmo Bowl or Urban Champion can be fun just to see what 8-bit football and fighting games looked like. But I don't find any major replay value in them.
