I've beaten both games, and I do agree that they're "artificially" hard. I don't mind the whole lose-your-souls-when you die thing, because that's actually challenging. If you lose a lot of souls, you have to use caution and strategy to make it back to the bloodstain and reclaim them.
No, my problem is the cheap bullshit gaming decisions the designers implemented to make it hard just for the sake of being so. The healing animation makes me want to toss my controller across the room (hold up! Time out! I need a drink!), and most of the bosses have some element that unnecessarily increases their difficulties. The Capra Demon in Undead Burg in Dark Souls, for example. He'd be a complete punk if it weren't for the fact that his area is basically a walk-in closet. The boss himself is easy, but the environment gets in the way just enough to make him "hard" to kill. Other bosses, like the Armor Spider in Demon's Souls, can be killed without even touching you.
The games are excellent, but there are some really poor design choices in both of them.

to add something to this. demon souls can be cheap hard especially because the saving is ridiculous. a game that is hard but not in a cheap way was dragons dogma. and that game is fucking awesome.
