I am currently on the final stages of episode 1 on DOOM (psx). Having a great time down memory lane. It sucks that with epsxe graphics blasted to the max the wall textures are still pixelated as heck!
Any advice for me?

If you're playing on a pc emulation. Might as well play the PC Doom, and there are resolution & graphic updates available. Search for JDOOM... Cool stuff. You get that nostalgia AND graphic improvements. You can even look up and down and jump if I remember correctly. Otherwise, play on real hardware. At least I think that's what most people are going to express around here.

emulate!

At this point, there is no reason to play any of the console ports if you have any kind of a PC in your house or just a laptop. Except Doom 64 which is not a port but a different game but even that has been ported to PCs (DoomEX)
What is JZDoom? Will it run on win7?

I've enjoyed my 32X version thoroughly. Gameplay first, graphics come second.
Play Brutal Doom instead.
Zdoom or Zandronum port + Brutal Doom mod + Doom 1 and/or 2 wad files.
Guys, just play Zdoom on the PC. :p
Zdoom just made the original game even better.
Edit: and allows for all kind of cool mods :p

Wow, both brutal and JZdoom look amazing. But are they only for Doom 1 or also Doom 2?
the PSX version has Doom, Doom2 and Ultimate Doom

As a longtime member of the DooM community, I'm all for graphical improvements and source port upgrades, but if you need upgraded graphics to enjoy DooM, you're really missing the point. That being said, there are a million solid ports for the PC that can get you through the single player maps. If you catch one of the weekend events, you can even still play classic multiplayer DooM on the multiplayer-themed port Odamex (which strangely enough is cross platform with the original Xbox).
well they are just sourceports, which means they rewrote the engine to run on newer operating systems,
so you're still playing classic doom, but you have a lot of options to play with. (like freelook and easier ways to load mods)
and you can use both doom 1 and 2, you'll just play classic doom but with addons.
The Doomsday port (which includes Jdoom/Jhexen/Jheretic) even allows you to load 3D models to replace stuff.

Personally I played with Doomsday a bit, but the thrill of high res art and 3D models soon wore off.

I am enjoying the psx port thoroughly right now but I am down for a graphics upgrade if its all the same. Sorta how they redid Duke Nukem 3D that was awesome.
Which would you recommend out of the 3, JDoom, Brutal Doom, or Doomsday??
JDoom is one part of Doomsday, and Brutal Doom is a mod that plays on GZDoom.
Engines (ports of Doom with various improvements): Doomsday (JDoom), ZDoom, JZDoom, GZDoom, PrBoom, PrBoom+, etc (there are many source ports of Doom due to the code being released by id).
Mods (modifications of the game data for new levels, new baddies, new weapons, etc): Brutal Doom, Doominator, Star Wars Doom, etc (WAAAAAAYYYYYYY too many mods to list).

EDIT, Hah so excited seeing Brutal Doom. forgot to mention only Doom I beat was on 32X when i was a 13 probably cant do it again :p
