If you've never played an EDF game before they're budget titles and an acquired taste maybe but I think anybody who likes old school arcade-ish games will love the shit out of it.
Instead of just God of War 3, why not just get the GoW Anthology (or whatever it's called), which includes all five games in the series up to that point?

You should really play Arkham Asylum before you play Arkham City, because City is a direct sequel and they mention stuff from the first game in there.
Make sure to get Mortal Kombat Komplete, it has all the DLC on the disc.
Not a really great game, but if you're an MK collector/player it would be fun to play if you could get it very cheap. (mine was like 10 bucks)
I would pick up an Uncharted game as well; it's my favorite PS3 exclusive series to date. I also highly recommend Little Big Planet.
Edit: Also might want to add the Sonic All Stars Racing games, given that this is a Genesis forum:) I have the first one and like it a lot. The second is reportedly even better.
Yes, I forgot to add the Uncharted 1 and 2 combo. I didn't get it today because it was used. Although, I browsed through the gameplay of part 3 that came bundled with my PS3 and I was not impressed with the soapy gameplay mechanics.

Last of Us and 3D Dot Game heroes are my favorite games on the console. Most everything else I've played on PC.
BUT if we're talking good console ports, definitely pick up:

Rayman Origins
Xcom: Enemy Unknown
Bioshock 1 and 2 (Bioshock 1 isn't nearly as good as 2, but it's necessary to get the story of 2. I always get flamed for this controversial opinion)
Borderlands 2 (really enjoyed the multiplayer on this one for the PC. Sister plays the PS3 version and it seems allright)
GTA IV (get this with the episodes from Liberty City)
LA Noire
And even though I haven't picked this one up yet: Red Dead Redemption
I'm sure KnuckleDuster can tell you why you should pick that one up. I've always wanted to try it out myself.
Red Dead Redemption is one of the definitive experiences this generation. Unfortunately it's only on PS360, but given Rockstar's track record of unoptimised engine ports it's not a great loss that a Windows release never materialised. (Max Payne 3 was decent however)
I've trawled PSN for some hidden must-plays.. Too bad that they won't be playable in the future unless you CFW your PS3. I see no fans of Journey on this board. Fail.

Little Big Planet 2 <--- Awesome if you like creating levels or playing ones other people created.

God of War 3 <--- My favorite in the whole series.. Fucking EPIC boss battles.
Ni No Kuni <-- Fantastic JRPG with a really simple but deep story
The Darkness 1 and 2 <-- Overlooked gems
Fallout 3 <-- The best of the Fallout games and probably the best action RPG I've ever played.
Skyrim <--- Beautiful graphics, amazing gameplay, and TONS of shit to explore.. Soft of the story but it makes up for it 10 fold with everything else.
Congrats on the new system. I'd definitely echo what others have said aboutRed Dead Redemption, that's been my favorite game of this gen. If you like RPGs then No No Kuni is a good exclusive and Skyrim will give you endless amounts of play. My favorite fighters this gen have been Soul Caliber IV and BlazBlue. Burnout Paradise and Sega Rally Revo are great racers. Under Defeat HD is a solid update of the DC game if you like shmups. Soldner X and Sine More are download only shmups as well. Batman Arkham Asylum and Ninja Gaiden Sigma are great action titles, and Civilization Revolution is a great strategy game that is much more arcadey than typical strategy games. Finally, I'll add Rayman Origins which is an outstanding platformer.
Also, you've got to throw in Sonic's Ultimate Genesis Collection.

While not PS3 exclusives, there are these:
Sonic and Allstars Racing Transformed:
Amazing "MarioKart Clone" that blows MK out of the water on all fronts. It oozes with Sega style and plays like classic Sega Arcade Racers. Though the PC and Wii U versions are better in both content and graphics.
Super Street Fighter 4 Arcade Edition:
A great entry into the Street Fighter Franchise. Plus on the PS3 you can use those nice USB Saturn pads.
Ultimate Marvel vs Capcom 3:
It's Marvel vs Capcom, what's not to like?
Resident Evil 5:
An ok, nice looking, Resident Evil game. It plays more like an action game like 4, though not quite as good. Still leaps and bounds better than 6 though.
Bayonetta:
A brilliant action game that's like Devil May Cry on really REALLY good drugs. It oozes with Sega style is just a blast to play through. Though the PS3 port has some technical shortcomings in the frame rate and loading department. If you have a 360 definitely get that version instead.
Star Ocean the Last Hope:
When Final Fantasy got really mediocre around FF12 I really got into this series. This one doesn't disappoint and is a blast to play. It's one of those RPGs were you want to get into random battles because they're so much fun. The 360 version has better graphics, but the PS3 has the benefit of being on one disc.
Virtua Fighter 5:
An excellent new entry in the Virtua Fighter series. Final Showdown was recently released on 360, though I don't remember if it's on PS3 or not.
Man, I wish I had gone with the PS3 over the 360, but it actually wasn't until recently that I've been thinking that. I can't really justify owning both, and I enjoy the 360 enough to not trade it all in.

If you're buying a game (like the Batman Arkham games or the Fallout series, Elder Scrolls series, etc etc) make sure you buy the Game of the Year Edition, new if possible, these include all the extras crammed in. A common (and shitty) practice now is to include download codes, so if you are going for these editions, buying them new is the only way to go (otherwise the codes will already have been used and you won't get diddy all). Just my two cents.
Not sure why it is generally speaking but the PS3 version of multi-platform games seems to suck in comparison to the 360 version. Don't get me wrong they are playable just not as polished.
I did a direct comparison of Bayonetta which is a fast paced game and it's really crappy on the PS3. I'd never get it for that console if I owned both. To be fair I haven't played any multi-platforms from a more recent release but I'm sure it's gotten better like you said.

Further questions:
1. Is it just me, or are the controls a bit laggy on action games such as Uncharted or Assassin's creed?
2. Is it worth it getting the free 1 year Plus membership?
The PS3 is region free, so you could buy a UK copy for cheap and play on your machine as if it were the US version. Both those games are cheap and easy to find over here, so my best advice is, if you can't find it locally for a good price, give Amazon UK a check for a better price. Or Amazon Canada, whatever's easier.
The lag could be coming from your LED TV. I have the same problem with my Samsung LED when it's set to "Movie" mode, but once I set it to "Game" mode, everything runs great. Here's a site that documents plasma and LCD TV lag: http://www.displaylag.com/display-database/
I just got a Brand New Launch 60 gig PS3 back in may. All I did was run through the infamous trilogy and then let it gather dust.
