Hating a great game like Castlevania Chronicles just because of its music is completely weird...
Ports from PS1 to Saturn are generally not worth owning unless they are cheaper than the PS1 game. I can't think of a single PS1 to Saturn port that looks like a proper Saturn title, much less as good as the PS1 original. Sometimes Saturn ports to PS1 suffered, like Thunder Force V, Silhouette Mirage and Grandia, and sometimes 2D games were "best" on Saturn, but generally one can get the PS1 version and be okay.
Destruction Derby on Saturn has much worse pop-up and the only reason I can figure given the level of detail is it was ported too quickly by too small of a team. All of the interviews I have found so far usually have the Saturn version being ported by one individual programmer once it was clear that the PS1 was the higher seller software and hardware wise.
That said, I think I would start selling Genesis games I don't play before I'd start liquidating my Saturn library, even the ones that are cheaper on Playstation.
