It's not entirely EA's fault the NFL got pissed off when 2K5 was being sold at 19.99 and they felt that it somehow devalued the NFL brand. So they offered the exclusive rights to EA. BTW 2K never outsold Madden.
2k5 is still the best NFL game ever made
You're right on what spurred the NFL into doing this, but the exclusive rights were open to all developers. EA just outbid 2K for the console rights. For what it's worth, there are separate licenses for non-console NFL games, which is why we have Gameloft's NFL Pro 2013, Zynga's NFL Showdown, etc.
Why would the NFL be pissed about it? Sega paid for the license at a set value and chose the pricing of their product. This is more about NFL promotions and EA was better suited to promote their product than Sega was. Sega actually offered more cash for the license than EA did, but for some odd reason the NFL went with EA.

Yeah, EA thought 2K's low price devalued the NFL brand.
Players assaulting their wives, killing people in drunk driving accidents, or just basically being Aaron Hernandez on the other hand, doesn't de-value the NFL at all.
