Sunset Riders hold C button and press Start on 1 player or 2 Player and you hear a "coin sound"
If you don't move Sonic for a bit, he taps his feet.
Seeing Aladdin do his thing... and later Mowgli do his dance... when not doing anything.

I love hidden game material / Easter Eggs. I might revisit this thread when I give it more thought but off the top of my head that may not be the usual suspects:
Robo Aleste CD - At the very beginning of the game where flying above a waterfall, pause the game periodically and look along the rocks - I happened to find a few rocks that look like skulls! Not terribly interesting but there may be a few eggs within this game's background if you care to look.

There's 2 fun little easter eggs I remember seeing during my time playing, Battle Mania Daiginjō.
During the city speed chase, you well see a reference to one of VIC TOKAI games, SOCKET in a sign and another reference in the same level with a pack of Marios throwing green mushrooms at you.

Whoa! I never thought leaving your characters idle would reveal such amazing feats!
*A kid throws a SNES on you on one of the levels in Bart's Nightmare (the kid throws a Genesis in the SNES version).
*If you hold some buttons, one of the lead characters will start stomping on an SFC in Battle Mania right after the Sega logo appears.
*The dwarf from Golden Axe runs the shop in Shining in the Darkness.
*Phantasy Star IV has a Game Gear and references to Ecco, Golden Axe III and Sonic.
*The aircraft from After Burner appears on one of the Outrun levels.
*Wiz 'n' Liz has various references to other Psygnosis games, for example Puggsy.
*Snatcher's nght club has some Konami characters in it, for example Rocket Knight.
*Lemmings or the sequel has a Shadow of the Beast level.
*Pier Solar has many references to other games, for example a Sonic shoe item which boosts speed, and you can only get it if you have a 32X plugged in when playing the game.
*Beggar Prince references the Zero Wing intro.
*Oh Mummy has a Pacman stage and some other stuff.
*Bonanza Bros. has a stage with many paintings inspired by various Sega games.
There's the famous hidden Ecco creatures that can be sung to in the prehistoric levels. If I have it right there were supposed to be some creatures rendered in that would ask Ecco who he was and how he sings their songs under the sea, and that they may try living in the sea themselves after contact with Ecco.
I found this myself on the Game Gear version first, and then found also that the same egg was in the MD version too.
