A Link To The Past (SNES) and Link's Awakening (GB/GBC) are the ones you want. People not blinded by N64 nostalgia will tell you that either is the best (LA is my pick). Minish Cap (GBA) is pretty good if you want a short and simple take on the style. Majora's Mask (N64) if you want to try a very different take on the style (play the others first). A Link Between Worlds (3DS) plays rather different, and is very love it or hate it (most people love it, I don't like it at all and will never even try to play it again), I recommend trying it.
You can ignore the rest. Play Twilight Princess (GC/Wii) if you want to see what modern Zelda is like.
I will probably start with A Link to the Past since I have an Everdrive.
I actually own a number of Zelda games. Either buying them cheap or as part of a lot. They're part of a healthy backlog.

Why are there so many damn puzzles? Sure, old Zelda games had them, but they did not take over the entire damn game. Why is Tingle still here? Tingle is a terrible character. TP was better, but was followed up by the even worse Skyward Sword, which destroyed Link's character. It was also accompanied by crappy handheld Zelda games. Aonuma's big problem is his puzzle addiction, followed by the random ideas, and then Tingle.
All I want is a cell shaded Zelda game based on the 80's toon.

If I am going to get swept up in a Zelda game, LttP isn't going to cut it. There's a more exciting adventure to be had in OoT, which is a revamped and upgraded LttP in structure. This is a good thing, because LttP is a far slower game, even if you count those 3 unskippable cutscenes in OoT. Nearly everything is an improvement - atmosphere, world, dungeons, bosses... It's the whole kit n' kaboodle.
LttP and LA are good games (though LA, despite my first Zelda, does suffer for its tiny screen). They're somewhat strange inbetweeners. Not as fast-paced and action-packed as the games before them, and lacking the scope of the game afterwards.
I guess if you've never played a newer Zelda game, TP is all right, but its attempts at passing off its paper-thin story as memorable come off as cheap and forced (lol remember the resistance, guys?), and its aggravating tutorials at the beginning are real hype killers. There's a lot of good stuff to be had in TP though. So much better than WW.
I can't play the N64 games. I've tried more than once. They bore me to tears.
Back in the day I watched friends playing the N64 Zeldas thinking meh. Plus I despise the N64 controller buying numerous 3rd party ones.
A lost fellow named Breetai suggested the Hori N64 and I like it. Too expensive but to me it's worth it.

My 2 favorite Zelda games are probably Link's Awakening and Zelda II, which is nowhere near as aimless and hard as everyone makes it out to be. It's much better than the first Zelda. I also do really like Ocarina of Time, and I liked Majora's Mask a lot back in the day (and I really enjoyed 100% completing the 3DS remake last year). I thought Twilight Princess was kind of slow and boring, and stopped playing it probably a bit past halfway through. I still want to play Wind Waker, but just haven't gotten around to it. I admit to not liking the style (I indeed would have preferred a cel-shaded style in the vein of the original Zelda games' artwork), but that isn't why I haven't played it yet. Other things have just been getting in the way. :p I also need to play through the Oracle games. I have zero interest in Skyward Sword, because of things I've heard.
I actually genuinely like the designs in the Zelda episodes of Captain N, especially when decent animators were involved:

5'16". I'll probably still get it on my next N64 haul. 3-pronged piece of crap vs. tiny ass controller, tiny ass still sounds better.
Don't you guys know that Ocarina of Time is the best game ever made, it hasn't been surpassed by any game that will blew your mind 100x more, like GTA III, Skyrim, Metroid Prime, Witcher 3
