Mario Kart Wii is terrible. If you disagree, try Mario Kart Double Dash and Mario Kart DS, so you can see standard and off-beat Mario Kart done well. Then try MKWii, you'll immediately notice how much worse the rubber-band AI is, on top of the ugly graphics, lame tracks, completely unbalanced items and frustrating controls. It's bad enough with a regular controller, it's utterly unplayable with the Wii Wheel.
