Arizona doesn't have anything on New Mexico that's for sure. I will say though my dad had a neighbor in San Simon not to far from the New Mexico border , with a few acres of green chilies growing they were some the best I have ever had.

Food trucks. I'm sure they exist everywhere but I get the impression that they're not so pervasive outside of California. We love our food trucks, and I don't just mean the taco trucks that dot the urban landscape. We have special events with food trucks. In San Francisco, there is a permanent installation of food trucks (the lineup varies) called the SoMa StrEat Food Park. Yeah, I hate that name too, but they have some good stuff. In Oakland, there is a monthly art festival/street fair that's like half food trucks.
Sometimes food truck food is just a decent burger or pizza, but often it's something unusual, or something familiar with a twist.
You know, sometimes you get out the club at like 2am and you have a hankering for shrimp falafel gyros.

I live near Penn State University and there's two amazing places to get Milk and Ice Cream in the area. One is obviously the Penn State Creamery which is just famous for making good Ice Cream with lots of really good decadent flavors like Death by Chocolate as well as more interesting ones like Peach. The other place though is a bit more of your local dairy farm store and that's Meyer Dairy. They don't have as many exotic flavors as the Creamery but they do the classics extremely well. So well that they actually beat Penn State in a local taste test a few years back. On top of that, their Milk is amazing too and comes in Glass Bottles. The main difference between them and what you buy in the store is that while what's in the store was milked about a week ago, what they sell was milked that day or the day before. On top of that, their 2% tastes like what most other brands sell as whole milk.
Another one of my favorites in the area is the local pizza places (Brothers, OIP, etc.) take on Philly Cheese Steaks and subs. They usually use their own rolls they make from their pizza dough. And for their cheese steaks they use Mozzarella cheese instead of cheese whiz and usually put Marinara sauce on it. It's a pretty nice combination and I've come to prefer it over your typical Philly Cheese Steak.
A few other foods I enjoy that usually throw people off in the Central PA area:
Pot Pie - Instead of being an actual baked pie with meat and what not in it, think more of a creamy soup with potatoes, meat (ham, chicken, or Turkey usually), onions, celery, and thick pie dough like noodles.
Pickled Eggs - Pickled in Beet Juice so they come out purple. I thought this was the norm until a couple people I worked with from other areas told me that was weird and that they are usually just done in regular pickle juice where they're from.
Chicken and Waffles - Instead of literally fried chicken with waffles + syrup, it's instead Waffles with a chicken soup/gravy on top.
Whoopie Pies - Some places call them Gobbs (why?) but if you've never had one before think two flat but round pieces of cake with white icing or peanut butter icing in the middle. Usually come in Chocolate, Pumpkin, Vanilla, or Spice flavor for the cakes portion. Closest commercial product I could compare it too would be an Oreo Cakester.
Any y'all in Utz country eat their dark pretzels? Also, Katsu Burger. Google it.
Pennsylvania has the best junk food companies by far. Utz (plain), Herr's, and Middleawarth (BBQ) are the best (mass produced) potato chips in the world. Unlce Ray's out of Detroit is a strong runner-up, but they overdo their seasonings a bit. It's so disappointing when I'm traveling out west and there is nothing for sale except Frito-Lay (Pepsi) chips and pretzel products.
As for Utz dark pretzels, they're rarely for sale on store selves, you have to go looking for them. The Unique Pretzel Bakery has a strong hold on the dark pretzel market around here. Unique fucked-up and changed their manufacturing back in 2013, but the Extra Dark are still great. Everyone scoffs at first glance, but if they have the courage to eat one, they always love them.
A small PA chip maker called Kay and Ray's used to produce a dark potato chip which was one-of-a-kind delicious. Around 2013 they were bought-out by Gibbles, and then Gibbles went under, killing Kay and Rays. Someone brought back the Kay and Rays brand, but now they only produce plain chips. The dark (and BBQ) are what put Kay and Ray's on the map - and now they don't exist!
One more Central PA food note: Auntie Anne's soft pretzels started around Lancaster. When I was a kid there was one of the original Auntie Anne's stands at a local farmer's market. Everyone who worked there wore the traditional Amish (or Mennonite?) black long dresses and bonnets. Pretzels were 3 for a $1. Anne ditched that religion and cashed-in for millions.
When my mom lived in MD a couple years ago she used to send me care packages of Utz dark pretzels and sesame sticks. Both are stellar junk staples. I don't know if Giant or Super Giant exist in PA, but they always had them readily available.
Food trucks are definitely the way to go in these parts. We have all sorts of good Mexican cuisine.
Also, 麻婆豆腐。
In LaCrosse, WI Downtown Brown is the local beer favorite. As for food every place has a version of a cheese curd burger.

The Giant supermarkets still exist in southeast PA with numerous stores all throughout the greater Philadelphia region, I don't think they have any in the city itself though. The city itself is well known for pretzels particularly soft pretzels
