How to use Steam to play modern source ports of classic FPS games and good MIDI sound

I've recently discovered a lot of little tricks (most of the info is available in random Steam community posts but I also discovered some stuff with trial and error) to make a better use of my Steam library of classic FPS games and I thought it would be good to share the knowledge here in a more organized manner.
Most of the tips I'll provide here will probably work with GOG.com versions but I don't know for sure 'cause I only use Steam (and Windows) and therefore this thread will focus on Steam and Windows only.
By the way, I use Windows 7 only (even on modern hardware) so don't blame me if your flashy Windows 10 fucks you up.

Setup of Audio Tools

A) Equalizer APO and Peace Equalizer (optional but strongly recommended)
I'm looking at you who uses that non-gamer PC whose default sound equalization is awful (usually super muffled) and gives you no equalization tool out of the box to fix it.

Equalizer APO (and its UI, Peace Equalizer) is the blessing you've been waiting for.

1) Download and install Equalizer APO

Just execute the installer and go with it.

2) Enable Equalizer APO for your sound card

3) Download and install Peace Equalizer

Just execute the installer and go with it.

After finishing the installation, you'll have a screen like this (mine is already adjusted to my preferences):

B) BASSMIDI (required for good MIDI music)
This is the MIDI driver tool which will allow you to play games emulating the MIDI sound of stuff such as the Sound Blaster AWE32 and Roland SC-55.
You'll need the SoundFont files of each module/sound card you want to emulate, and those may vary in terms of quality/accuracy. So I'll focus on what I've tested, read about and know that works well.
