Man it's all about Ms. Pac-Man, that game is the shit, that game rules all other iterations of Pac-Man ever
I can and have played this game for about 3 hours straight (free play owns), I had to give up because my arm started to get sore
I was all about Ms. Pac-Man before I played Pac-Man CE, the multi colored mazes, moving fruits, so much better than Pacman. But Pacman CE trumps Ms. Pac-Man.

The closest thing I can think of when it comes down to infinite replay value is something like Street Fighter.
No match will ever be the same.
No matter how long you stay away from it, just gather a bunch of friends and fun is guaranteed in the same awesome level as it has always been.
I'd say about 50% of the arcade games from the 80's have infinite replay value. The movie "King of Kong" represents a small fraction of what it means to master one of those quarter-munchers.
I'll never tire of Sega Rally 95 on the Saturn; The game demands perfection on every level. Nights and Burning Rangers were meant to be played like that as well.
Tempest 2K and Ms. Pac Man for sure. I still enjoy both. Street Fighter 2 as well, since I still pick it up from time to time *many* years after first playing it in the arcade.
I'd also add Starcraft (multiplayer). It's always good fun.
Star Fox (SNES), simple fast paced arcade style railshooter, multiple paths, secret areas, short cuts, easter eggs, and great music. (amybe ont infinite but it hasn't gotten repetitious for me)
Maybe some SHMUPS, maybe not, many bosses may get boring after awhile, I don't know about Silpheed (the levels are great, most of the bosses are redundant), though the difficulty is a bit high for me so I have't gotten all that far...
But yeah, those simple late70's/80's arcade games (and early home console exclusives), other than those mentioned there's: Space Invaders, Robotron, Joust, Sinistar, Missile Command, Battle Zone, Tempest, Break Out, Centipede, Defender (maybe) and probably some more I'm missing. Don't know if Donkey Kong would fit, and I think Star Wars (Atari Arcade) does get repeditive pretty fast. (great game though)
A lot of these old games lack droning repitition simply that they're simple and repeditive by nature with only small, incremental differences between levels in many cases.

Soulcalibur, SCII, Streets of Rage all of them, Mario Kart Double Dash. The newest thing I have is a Gamecube (the ps2 is just a technical project so far), Altered Beast (Genesis), and Galaxian on the Atari 8-bit computer. Those are my nominations, they get played often around here.

Battlefield 2 Bad Company on the 360, can play that all day every day!
but as for retro, anything sonic and i'm there! im still the same 13 year old kid at heart that fell in love with my megadrive and playing sonic for days!
For me any of the Sim Cities or Pharaoh.:D
