Mega/Saturn Bomberman if you've got one or more friends with you--I've got 2 Saturn multitaps and 10+ controllers, but not that many friends so I've never pulled off 10-player yet.

Bomberman! How could I have forgotten that. All 16-bit iterations are timeless. I play the Megadrive version to this day whenever one of my friends and I get together, and it's great fun. I enjoy the TG versions and will track down the SNES ones when I get the money:)

Robotron and Sinistar are awesome, especially Sinistar. I bought Williams Arcade's Greatest Hits for PS a couple months ago just for Joust and discovered the other two.
Definitely puzzle games (Tengen's Tetris, Chuchu Rocket, Columns, Bejeweled, Marvel Puzzle Quest, Bust a Move, Shanghai, Solitaire, and Flipull).
I must have played Aladdin, Sonic 2 and Mortal Kombat II a thousand times over; and will continue doing so for the rest of my life. They were my first 3 games on the Sega Genesis.
As for overall games with infinite replay value, I'd add shmups overall. They're just fun, even if you don't beat them.
