I voted Contra. Gunstar Heroes is 2 games, so I don't feel there is enough to merit it's inclusion in this discussion.
Metal Slug is consistent across the board, and wonderful. Great art style and the new games are just as good as the old! But it sort of feels like one big game to me, there isn't a lot of variety. Metal Slug 8 is basically as playable as Metal Slug 4 and so on.
Contra has ups and downs, and the gameplay differs dramatically. Super C and Shattered Soldier are not really similar at all, and to me that is a quality, not a drawback. I think of the Contra series as similar to Castlevania, there are a lot of games and they are all unique. Some people like the Metroidvania games etc... some don't, but the spread it represents will keep you on your toes.
So I choose Contra because you have no idea exactly what is coming your way. And Hard Corps is bitchin.

Contra for me. Although Metal Slug and Gunstar Heroes are both very enjoyable games, Contra for me is the best of the bunch.
Contra's the only one which has stayed (mostly) awesome.
Contra 4 is amazing. Not really Konami's credit, but still.

Metal Slug is a slow plodding game in comparison to Contra, and Gunstar doesn't have enough games to make a decent comparison.
Contra easily, with Metal Slug in a close second. Metal Slug has excellent graphics, but the challenge is stupidly hard arcade challenge, while Contra is hard, but NES hard.
Gunstar Heroes is great, but with only two games in the series and one being a semi-remake, it's not a fair contest.

Contra has delivered consistent quality during its lifetime. I didn't really like the Gunstar Heroes sequel for the GBA. Metal Slug started getting really mundane for me as all the sequels started feeling really uninspired. It peaked at 3 IMO.
