Final Fantasy V Advance is probably the definitive version of FFV. The Anthology version uses the Woolsey translation that would have been used if the game was released for the SNES, and I find Faris' pirate speech to be irritating.
I haven't played the PS1 version of Final Fantasy IV, but the battle glitch in the GBA version is very irritating (the bonus dungeons and ability to change characters at the end is a nice addition, though). I heard that the European release of FFIV Advance fixed the battle glitch, so remember that the GBA is region free. The DS version is nice, but it is freaking hard, and you can easily be wiped out by regular enemies. Personally, I would try the J2E fan translation of the original SFC game.
Final Fantasy II is just a terrible game, I didn't like the mechanics of character building at all. Final Fantasy I was made tons easier on the GBA version with the removal of spell levels in favour of a magic point system. From what I hear, the PSP version is the ultimate version of Final Fantasy I+II.
