For offbeat, I'd strongly suggest Donkey Kong Jungle Beat WITH the bongos. It's a DK platformer that you play with bongos...that sounds weird, but it is seriously fun.

Try to snag a Game Boy Player, which will expand your library exponentially with all the classic Game Boy Advance titles.

I also recommend F-Zero GX and SoulCaliber 2 (who doesn't love Link going head-to-head with Mitsurugi?).

Ultimate Spider-man, Mega Man Anniversary Collection, Mega Man X Collection, and the X-Men Legends series are all worthy of your consideration even though they weren't Gamecube exclusives.

And then there's a whole slew of exclusive Sonic games of varying quality.

No love for Luigi's Mansion or Wario World? Get yourself a cop of Zelda Four Swords adventures too. It's not your typical zelda game, but it's still fun as hell. You don't need a gameboy advance or multiple players either, the one player game is plenty of fun.

I love MGS, but honestly, I prefer the original version.

Gamecube apparently couldn't handle more than that either, judging from all the slowdown.

The game is basically the same, apart from the additional gameplay elements taken from MGS2. The problem is, Metal Gear Solid wasn't designed for them, and it shows.
