Don't know if the genre is well represented in the Genesis games.
What is your favourite one ? Why ?

WWF Wrestlemania arcade game. Super fun! Cant think of any other ones on the Genesis I enjoy.
There are six I can name off the top of my head: Wrestle War (EU and JP only), WWF Royal Rumble, WWF Wrestlemania, WWF Raw, the JP-only Thunder Pro Wrestling Retsuden, and Cutie Suzuki no Ringside Angel, a JP-only Japanese female professional wrestling game. As far as I can tell, boxing was more popular on the MD than wrestling =P (I'm not sure by how much though...)

WWF Super Wrestlemania: the worst of the 4 wwf games easily, wwf games needed the 6 button controller to be good, also you could do your finisher any time and it didnt do any more damage than normal moves.
WWF Royal Rumble, great for the time, the royal rumble mode is still fun to this day, and the finishers are now only performed when the health meter is drained to the red. Also good roster.
WWF RAW: Very similar to Royal Rumble, has survivor series mode now, and now some wrestlers have different regular moves and their own stats (yokozuna will run slow, 123 kid runs fast) also they added megamoves (gotta look it up how to do them) which added a little zanyness.
WWF Wrestlemania: The Arcade Game - Mortal Kombat meets WWF, and is really fun! I like this game alot, if you like mortal kombat and stuff, this is a good game!
Id say it was a good one-off game, but acclaim made a sequel (in your house) that wasn't as good imo.
Also VERY HIGHLY recommended you have the 6 button controllers for royal rumble, raw and wm.
Also WWF Wrestlemania Arcade. Over the top fun. And it's super smooth for a Genesis title.
I found Royal Rumble and RAW slightly better on the SNES. Super Wrestlemania, however, sucks on both.

Shame we never got a good Fire Pro Wrestling game for Genesis.
I still play Fire Pro Return, pure wrassling bliss.

Saturday Night Slam Masters owns. 2 player barbed wire exploding bomb death matches!
Saturday Night Slam Masters from Capcom
people generally regard the SNES version as being better.
edit: didn't see the post 7 minutes prior to mine since I was watching youtube vids of the game

Always loved Royal Rumble, and Raw, but both games have aged terribly.
One thing about the games that is unique is the button mashing controls when the players lock up. The struggle to mash as many buttons as hard and as fast as you can with another player to win the clinch is a nice way to replicate the real life feeling into a video game. I remember wearing my hands out playing this game against my little brothers back in the day.
I wish the UFC would've made a game for the Genesis back in the day with the old school fighters, Gracie, Shamrock, Tank, Severn, Frye, Coleman, etc. They could have just modified the Raw engine, but put in realistic fighting moves, in an Octagon instead of a ring, and with a little blood. I wonder how hard it would be for someone to hack Raw for a UFC game?
I don't play old stuff for nostalgia, I play old stuff because the games are better.

Thunder Pro is very good, but it is a very primitive Fire Pro game and lacks any features. It's just your standard 1 on 1, or tag team modes with a tournament/championship mode. Unfortunately I can't read manual so I haven't completely figured out how the game engine works.
To be this good takes AGES, to be this good takes SEGA!
