TIE Fighter is the best game Lucasarts has ever published, my favorite space shooter, and one of the greatest games ever made (it's easily in my all time top five), and Jedi Knight 1 is my favorite FPS. '80s-90s Lucasarts was pretty amazing. As for KotOR... it's disappointing in a lot of ways, but I had just enough fun with it that maybe it deserves that position. Maybe. Perhaps I should have given it to Galactic Battlegrounds or Dark Forces instead, I'm not entirely sure...
Also, while I can't quite put it on my list because objectively it's probably not that great of a game, I have to mention Rebel Assault because it's a nostalgic favorite of mine. That was one of the first CD games I owned, so I loved that game back in 1995, and I still find it fun...X-Wing vs TIE Fighter is also worth mentioning, even if it isn't as good as any of the other three. The first Dark Forces also should be mentioned, because it's a pretty good Doom-style game. My one issue with it is a serious one, though -- I REALLY dislike that you can't save during levels, it makes it quite hard. And I mentioned it earlier, but Galactic Battlegrounds is pretty good. It's basically a straight Age of Empires II reskin, but at least they cloned a great game.
As for the console games, I don't know if they're better than any of the PC games above -- and they are most certainly not better than the top two, that's for sure -- but I guess I could make a list.

It's simpler but not as frustrating. As for Star Wars Arcade for 32X, it's not a great game, no, but I have had some fun with it anyway, probably as much because it's a Star Wars game as anything else...
The worst Star Wars game I've played might be Star Wars: The Clone Wars: Republic Heroes. That's a pretty awful game. The PS1/PC Episode 1 game isn't very good either, but I think Republic Heroes might be worse... (I haven't played Masters of Teras Kasi, so no opinion on that one.)

I too can't stand the Super Star Wars series, those games are overly hard unfun platformers IMO.
I LOVE the Rogue Squadron Series. Very hard to top.
In the same vein, Star Wars Trilogy in the arcades by SEGA is another excellent game.
X-Wing vs. TIE Fighter is also fun.
I played a TON of Star Wars Jedi Knight III: Jedi Academy back in the mid 2000s.
I even enjoyed the little Point and Click Yoda's Stories adventure game.
But to be honest, it just doesn't get more fun than this:
I just realized that the Game Gear got a Star Wars and ROTJ game but no Empire Strikes Back game. Seems kinda odd they would skip that one.
Yeah, it is kind of funny that the GG didn't get a version of the NES/GB ESB game...
I've enjoyed a lot of the games mentioned so far, good stuff all around. Not sure I could pick an absolute favorite, but my favorite online Star Wars experience is most likely a mod for Jedi Academy called "Movie Battles II":

The Super Star Wars games are awesome, it just takes a masochist to complete them w/o cheating.
I still think they are good but the levels are very repetitive and too long and the games wouldnt get such high marks if the graphics and music werent of such a high standard. Some of the mode 7 levels look good and some look terrible. The land speeder level in SSW isnt bad but the Speeder bike level in ROTJ looks terrible.
Speaking of Star Wars Trilogy Arcade...
Sega should get the license and port that to the Wii, with another one of their games.
Yeah, I know last year I said the same thing with the Lost World arcade game, but come on! That would be awesome!
