The differences aren't that noticeable unless you have good hook-ups, and are actually swapping between the two versions quickly, not playing them one after another (I got both versions into the same areas looking the same directions, and then got one of my friends to quickly swap between the two).

Just mentioning it as many people simply state that the PS2 version has better graphics due to the cell shading (which is mainly limited to the player characters anyway, as levels will literally be the same as Dreamcast but with one or two items, such as 1 waterwheel, or 1 tank cell shaded independently or everything else), when, for the most part 80% of the time the areas look the same as Dreamcast, but with lower quality texturing.
