Tekken 3, on the PS1, runs at 480i.
I can verify that even the demo runs at 480i, because on my old 70's Samsung TV, it's very easy to spot interlacing or non interlacing.
Customized Sega Genesis Model 1 - VA3. Energy efficient with buck converters instead of LM7805's.
Virtua Fighter 2, Digital Dance Mix, and Dead or Alive run at 704x480. I think Last Bronx and Virtua Fighter Remix run at that too but I could be wrong. Bomberman uses 704x480 for the 10 player mode. Panzer Dragoon II runs at 480i as do a decent amount of other games.

A surprising number of games use 480i for title screens, options and other static images. Thunder Force V, Bulk Slash, Sonic Jam, pretty much any game with an art gallery, etc.
My bad, I thought you were saying 352 is what the arcade versions ran at. I know the Saturn games have less screen space than originals, but I can never recall horizontal resolutions off the top of my head.

Tekken 3 is 384x480, I think the only higher resolution game on PS1 is at 640x240. Raystorm had a "high res" mode, I'm not sure what that actually ran at.
