Are SNES Classics still in demand? I've seen them on the shelves a few times, but can't bring myself to buy one.
Among scalpers, yes. The moment that the device is released on Amazon (almost on a weekly basis), the item is sold out in 4 to 5 minutes thanks to bots.
It appears that bots are used less frequently on sites like Walmart, The Source, etc. because these stores tend release their stock sporadically/less frequently.

Looking at the BIN prices online, the profit is quite low after selling fess, free shipping fees and such are tabulated. If I ever see them selling close to retail or stumble upon an online site selling for such a price I'd, w/o hesitation, pick up a Super Famicom version.
Target apparently has a lot of these now. The Target near my home had one about a month ago, and I saw 5 of them at the same store on Saturday.

Average price is around $60 or $70.
Modded go for like double that (or more). By the way, modded SNES Classic probably isn't worth it because Retroarch on it has really high input lag (see here).
Current auctions are hard to go by. I was bidding on Turrican for the C64 and was going to wait until the final 10 minutes before putting in another bid. I ended up bidding against a bot that ended up paying $50 for it. It was at @$20 before I started bidding it up.

I'm glad to see that the scalpers pretty much lost out this time, hopefully when the Nes Classic is rereleased it gets large stock shipped as well.
