These days you can pretty much use anything. The only limitations are actual instruments, not the hardware.
Rusty, how much spectacular music in videogames do you hear these days? I imagine not much, not much at all. Videogame music has taken a huge turn for the worse. The melodies are gone. Most game music is trying to sound like movie soundtracks, and that's just lame. There's no personality in it any more.
The last soundtrack that wowed me was for "American McGee's Alice". Creepy, eerie, and haunting in parts.
I think the possibility is there for soundtracks to be great, especially with no limitations (system-wise), but most either tend to be nothing memorable or licensed music.
