Good read, the article says that there wasn't a options menu in the SNES accessible by holding the R button down, however I didn't see any difference in the game play after the options were changed.
It's been years since I played the SNES version, but I think the difficulty options in the SNES version mainly just changed how much damage enemies gave you, since they couldn't increase the amount of bad guys on screen. Generally I only used the options menu to assign Extra Joy to the R button.

Can't someone make a Final Fight Arcade vs. Sega CD feature? It would've been awesome, even if we all know that the Sega CD-port is just as good as the arcade, if not better.
I'm having trouble justifying using fraps to record the current Mame iteration of Final Fight and compare that to Composite. It is just too much of a gray area for me. If I use Mame, do I set the audio to the same rate as Genesis output, or double or higher? Is my PC really showing the framerate and any other effects absolutely accurately? This problem gets even more convoluted if I were to use Mame and a Genesis emulator.
A standard is necessary before comparing Arcade to console, and I am all for seeing that standard developed.
I do have SNES and Sega CD version of Final Fight too. I like Sega CD version better than SNES version because it has much better Graphics, all stages and bosses, and best of all, It has 2 co-op players mode!

Sega CD is my favorite overall, especially because of the 2-player co-op, just like Sly Wolf said. And because games like Final Fight are some of the most fun 2-player games out there!
considering that the arcade version ha sbeen out on psn and the likes for a while now this really needs an update to compare the three versions with each other
off course the psn version will coem off best
its more how well the snes and sega cd stack up against it
